Consulting Corporation Ltd were asked to conduct a productivity review
of the food and beverage operations at Burswood. After the initial
2-week assessment, they were engaged to develop, in conjunction with
Burswood, an in-depth productivity system for application throughout
both the front and back of house for the Food and Beverage Department.
The review process involved developing and training all levels of
management to utilise new management tools for the maximising of
available resources and applying these resources against detailed sales
forecasts.
....The
project identified a resource productivity improvement of approximately
20%. Many factors have changed since the original specifications
including major unforeseen disruptions to business. Even with these
disruptions, we expect to achieve at least 15% improvement in the first
year.
The
teams from Sydney Consulting Corporation conducted themselves very
professionally and were sympathetic to the needs of a continuing
operation while assisting in the application of re-organisation in a
change environment.
The
application of productivity change has been made throughout all levels
of the Department to ensure the process is in-grained into the ongoing
fundamentals of the organisation. This has provided a solid platform
for a continuous improvement focus throughout not only our existing
outlets but also one which can be applied to the significant expansion
and development currently being undertaken in the provision of food and
beverage at Burswood.
The
integration of the Sydney Consulting Corporation team members and the
Burswood team was a key factor in the resultant ownership of the
